Biting into warm chewy delicious cookies. One of my favorite ways to celebrate holidays. I made these heavenly chocolate almond fudge cookies for Christmas and they were a huge hit with our family. I mean like none left and hubby was asking when I was going to make more kind of hit, so I decided to dress them up a bit and bring them back for Valentine’s Day. There’s not much that says Valentine’s Day like chocolate, right?

Valentines Fudge Cookies

You can enjoy these Valentine’s Day cookies even more knowing that I swapped some of the ingredients for healthier alternatives including the butter for Smart Balance.

Smart Balance LogoAlong with organic cocoa, natural vanilla and almond extract I made a healthier substitute using heart healthier Smart Balance sticks instead of butter sticks. I found out the first time I made the cookies and tried the switch I didn’t have to give up any of the flavor in exchange for Smart Balance’s 0 trans fat, and no hydrogenated or partially hydrogenated oils. Even better their unique blend of ingredients work to improve your ratio of HDL/LDL cholesterol. Smart Balance is an easy 1 to 1 substitute for butter so it was a no brainer to make the switch. Nice to be able to enjoy a cookie (or two) without all the guilt!

Smart Balance Cookies

These cookies are so moist and rich they almost have a brownie texture to them! And they are just as moist the next day. I picked up the fruit chews made with real fruit juice at Hobby Lobby. They did not melt in the oven and the cherry was just the right flavor pairing for the chocolate. So. Good.

Oh goodness yes! You are the first person to catch that! Teaspoons not tablespoons. That would be a lot of extract! Corrected. Thank you!
