Delicious Pairings: Starbucks, The Bakery At Walmart and Homemade Granola

I really, really wish I was a morning person but I’m not. I worked in corporate America for 15 years and even though I did it, I hated getting up early to be at work at 8 AM. Well, now work is not my alarm clock that gets me up early everyday. It is a 1 year old and a 2 year old that seem to have inherited some freakish early bird gene. It must be from their father’s side! They are too little to fix their own breakfasts so I have 3 sets of breakfasts to make in the morning and only one of us can dress ourselves. Anything that I can do in the mornings to make it easier as we head off to playdates or my son’s preschool or my little girl’s baby gym class I am all for! This week I incorporated some things to make our mornings smoother and so we can spend a little more time at the breakfast table talking about our day ahead. One of those was an easier breakfast with the Delicious Pairings of Starbucks Medium Blend and an Apple Fritter and Blueberry Muffin and Apple Fritter from Walmart.
My Leprechaun and I headed to our local Walmart to get our Delicious Pairings so that we could have a quick and easy breakfast before a trip to the park the next morning. He loves to go everywhere mommy goes and I know one day it won’t be that way and he’ll be too cool for mom so if he asks to go I usually let him. The Bakery was conveniently located near the entrance of the store and it smelled delicious! There were so many pastries to choose from: Apple Fritters, Apple Turnovers, Blueberry Muffins, Harvest Apple Danishes, Blueberry Cake Donuts, and Apple Spiced Donuts. Though I was looking for a Banana Nut muffin and there were none on the shelves,  the others all looked delicious and it was so hard to choose! In the end we chose an Apple Fritter for mom and Blueberry Muffins which are one of my leprechaun’s favorites.

The coffee was right there as well so it saved this busy mom a trip all the way back into the store. Though there was a Blonde and a Dark Roast but I chose the Medium House blend because I only recently began coffee and I knew from whizzing through the Starbuck’s drive through that it had a nice middle of the road flavor. Not too strong but a nice coffee pick me up!

I am one of those moms who uses that time when both kiddos are sleeping to get a little work done. (Can you hear a symphony playing?) I made myself a cup of the Medium Roast as soon as I got home and got them tucked in bed. It was about 38 degrees outside so it was warm and rich and just what I needed while I was working, putting out our breakfast dishes and clothes for in the morning, and making these parfaits so that all I had to do was grab them out of the fridge in the morning.

The little parfaits were so easy to put together. I made the homemade granola with the recipe below that I tweaked from All Recipes.com and then layered the homemade granola with vanilla Greek yogurt in the little parfait cups. So easy and cute and perfect to go with the Delicious Pairings and a grab and go breakfast. I snuck a little taste of the Apple Fritter and it was so sweet and cinnamony and it was hard to wait until morning. But I did! :-)

Homemade Granola

Ingredients:

5 cups rolled oats

1 cup finely chopped walnuts

1/2 cup brown sugar

1/2 cup honey

1/2 cup canola oil

2 tablespoons maple syrup

1 tablespoon cinnamon

1/2 tablespoon vanilla extract

1 cup dried cranberries (or raisins or any dried fruit)

Directions:

  • Preheat the oven to 325 degree. Line two large cookie sheets with parchment or aluminum foil.
  • Combine the oats, almonds, pecans,  in a large mixing bowl.  Stir together the brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Bring to a boil over medium heat, then pour over the dry ingredients, and mix well. Spread the mixture out evenly on the cookie sheets.
  • Bake in the preheated oven until crispy and toasted, about 20 minutes. Stir once halfway through. Cool, then stir in the raisins or cranberries before storing.

Homemade Granola

That next morning we were all so excited to go to the zoo so it was so nice to be able to not worry about breakfast. We grabbed our yogurt parfaits out of the fridge, I brewed another cup of the Starbucks and Leprechaun and I sat down with our Apple Fritter and Blueberry Muffin. The rich coffee really brought out the apple flavor in the fritter and made you want to linger over it. The coolness of the parfait was a great contrast to the hot coffee as well. The nutty granola was yet another flavor. Who knew such a quick and easy breakfast could be so flavorful? My little man loved his blueberry muffin but it was so big he only ate half. The sign at Walmart that recommended the flavors to pair it with was so right!

I may still not be a morning person but doing some easy prep work the night before including the easy yogurt granola parfaits and the Delicious Pairings of the Starbucks Coffee and The Bakery at Walmart, we were able to have an easy delicious breakfast and get down to business- enjoying the zoo!

    Oooh, it sounds yummy and I LOVE Starbucks coffee! Looks like a fun breakfast. I get photos of my husband and daughter having breakfast a lot of mornings from my desk… I’d love to leave corporate America behind but he is a great stay-at-home dad!

      Aww thank you! That is one of my sweetest compliments. I won’t lie, some days are tough with a 1 year old and a 2 year old, but they are the best things I will ever do in this life…even when I’m cleaning sweet potato off the blinds. True story. :-)
