It’s here! Super Bowl Sunday! Are you ready for some football? And some parties! And some commercials! And some food! If you’re a little iffy on the latter or can’t stand the thought of cooking up one more homemade dish to go with all your others I have the easiest last minute game day appetizers next to dumping chips in a bowl! These are ones that can be made with a last minute dash to the grocery store or you might even have these ingredients in the pantry or fridge. For the savory side there are these easy peasy potato skins. Better taste than frozen and not as time consuming as peeling potatoes for home made! I have not found a frozen potato skin that I think compares to fresh or restaurant so here is a compromise. These thick cut griller potatoes from Ore Rida (not a sponsor they just worked great for this idea) are just the right thickness for supporting potato skin fixings and then add your fresh not frozen sour cream, cheese, and bacon bits.
For the sweet tooth at the Super Bowl party these cute little football brownies! The brownies are from a mix that literally takes 5 minutes to prepare and 20 minutes to make. While the brownies are still warm use a football cookie cutter or a knife to cut your football shapes. I was able to get about a dozen brownies with little wastage by planning where I would cut. Once the brownies are cool, you can use a ready to go frosting bag to draw the little football lines. Be sure and wait until the brownies are actually cool though or your lines will run as mine did just a bit in the photo.
The potato skins take about 20 minutes to bake and 5 minutes to top and the brownies take 5 minutes to prep, 20 minutes to cook, and 5 minutes to decorate so both of these are low maintenance easy game day appetizer staples to have you ready for some football in no time!
