Thanksgiving is approaching and it is one of my favorite holidays because it has all the fun of tastey dishes made with love and being with family and friends as the December holidays without the stress of gift giving. If you are planning your menu here at two great Thanksgiving recipe additions that are sure to have guests asking for seconds…or even for the recipe.
Slow Cooker Macaroni and Cheese by Kathy Penney Inspired by A Whisk & A Prayer
1/2 cups milk
One 12 oz can evaporated milk
1/4 cup Country Crock Light
And now for dessert….
Vanilla Wafer Cake Inspired by Peggy Knight (Johnny & June Cash’s cook)
2 cups granulated sugar
2 sticks of Country Crock
16 oz box vanilla wafers
2 cups coconut
2 cups chopped walnuts
1 teaspoon cinnamon
1. Preheat oven to 300.
2. Thoroughly grease a tube baking pan. (So important that it is properly greased.)
3. Crush vanilla wafers either by hand or with a blender or food processor. I used a blender.
4. Thoroughly grease a tube cake pan. (So important that it’s properly greased.)
5. Add eggs one at a time blending each one.
6. Add crushed vanilla wafers slowly to the mixture.
7. Add nuts and blend.
8. Add coconut and blend.
9. Add cinnamon and blend.
10. Pour batter into cake pan.
11. Bake for 90 minutes or until fork comes out clean.
12. Let cool and frost with cream cheese frosting and trim top with vanilla wafers.
Important Notes to Remember About This Recipe:
1. I can not stress enough that the pan be properly greased. Because it’s made from scratch, the batter for the cake is incredibly thick and can have a tendency to stick.
2. Let the cake cool completely and gently ease it out of the pan. I love this cake and have made it several times but it is very easy to have the cake crumble if the pan is not properly greased or you try to take it out of the pan too soon.
3. This cake is heaven on a plate but it is incredibly dense and rich and is one of those things that a little goes a long way. It’s as thick as banana bread and so rich and should only be served in small pieces….but so so good.
