Thanksgiving Recipes: Vanilla Wafer Cake & Slow Cooker Macaroni & Cheese

Thanksgiving is approaching and it is one of my favorite holidays because it has all the fun of tastey dishes made with love and being with family and friends as the December holidays without the stress of gift giving. If you are planning your menu here at two great Thanksgiving recipe additions that are sure to have guests asking for seconds…or even for the recipe.

Thanksgiving recipe Mac N Cheese

Slow Cooker Macaroni and Cheese by Kathy Penney Inspired by A Whisk & A Prayer

Ingredients:

1/2 cups milk

One 12 oz can evaporated milk

1/4 cup Country Crock Light

3 large eggs
3 cups (12 oz) shredded cheddar jack cheese
1/2 pound elbow macaroni
Freshly ground black pepper to taste
1/2 cup grated Parmesan cheese
1 teaspoon of chili powder
1/2 teaspoon of garlic
1/2 cup season bread crumbs
1/2 cup real bacon bits
Cooking Instructions
1. Cook pasta until tender but not fully done and drain.
2. Spray inside of slow cooker with cooking spray or place slow cooker liner in pot.
3. In mixing bowl combine milk, evaporated milk, eggs, Country Crock, chili powder, pepper, and garlic.
4. Whisk until blended thoroughly.
5. Combine mixture and pasta in slow cooker.
6. Add the shredded cheddar cheese and stir to mix ingredients.
7. Sprinkle Parmesan cheese on top.
8. Cook covered on High for 30 minutes.
9. After 30 minutes switch slow cooker temperature setting to low.
10. Let cook for 2 hours until custard is ready.
11. About 10 minutes before slow cooker is finished, combine bread crumbs, bacon bits, and 1 tablespoon of Country Crock in small skillet and sautee until bread crumbs are brown and Country Crock is thoroughly melted.
Important Points to remember for this recipe:
1. This is probably the best macaroni and cheese recipe I’ve tried- the pasta doesn’t clump together and the flavor is wonderful but this is a recipe that needs to be timed so that it finishes cooking just before you are ready to have your meal. When it was hot it was amazing, but when I had another bowl later it just wasn’t quite as good so I don’t think it will be a recipe that reheats well. A perfect candidate for a Thanksgiving meal when hopefully there won’t be any leftovers! :-)
2. In my opinion, the bread crumbs and bacon bits are a must for this dish. I tried some of the macaroni and cheese without the topping and it wasn’t nearly as flavorful without. If bacon is not in your diet, I recommend a substitute or at least additional seasoning.

Vanilla Wafer Cake Inspired by Peggy Knight (Johnny & June Cash’s cook)

Ingredients

2 cups granulated sugar

2 sticks of Country Crock

6 eggs

16 oz box vanilla wafers

2 cups coconut

2 cups chopped walnuts

1 teaspoon cinnamon

Instructions:

1. Preheat oven to 300.

2. Thoroughly grease a tube baking pan. (So important that it is properly greased.)

3. Crush vanilla wafers either by hand or with a blender or food processor. I used a blender.

4. Thoroughly grease a tube cake pan. (So important that it’s properly greased.)
5. Add eggs one at a time blending each one.

6. Add crushed vanilla wafers slowly to the mixture.

7. Add nuts and blend.

8. Add coconut and blend.

9. Add cinnamon and blend.

10. Pour batter into cake pan.

11. Bake for 90 minutes or until fork comes out clean.

12. Let cool and frost with cream cheese frosting and trim top with vanilla wafers.

Important Notes to Remember About This Recipe:

1. I can not stress enough that the pan be properly greased. Because it’s made from scratch, the batter for the cake is incredibly thick and can have a tendency to stick.

2. Let the cake cool completely and gently ease it out of the pan. I love this cake and have made it several times but it is very easy to have the cake crumble if the pan is not properly greased or you try to take it out of the pan too soon.

3. This cake is heaven on a plate but it is incredibly dense and rich and is one of those things that a little goes a long way. It’s as thick as banana bread and so rich and should only be served in small pieces….but so so good.
